Our Restaurant, situated in a new Hotel which settled down in the place of the old estate of the merchants Izhboldins, perfectly combines dynamics of the present and a thorough approach
inherent to the merchants’ cuisine in it.
As is known, Izhboldins travelled a lot, and that is why a culinary book of their cook often enriched with new dishes. Each “foreign” dish was modified under the influence of tastes of the
Russian guests and the assortment of products which were available at the kitchen of Izhboldins. Just so, the meals which form the gastronomic heritage of the famous merchants today were “born”.
Following the gastronomic traditions of the past and involving the resources of the culinary skills of modern cooks, the Restaurant creates its heritage. A duet of the present and the past is
fully expressed on the menu of the Restaurant: here you will find the dishes stylized as meals from the merchants’ cuisine, but in the author’s treatment of the team of the Restaurant.
A conception of work of our kitchen combines a delicate approach to products and soft methods of cooking. When creating the menu, “Tenet” team decisively refused from foreign supplies, looking for inspiration in the products from own country: no poultry or fish grown up with artificial methods is cooked here – it is our conscious approach; only cold-pressed vegetable oils are used in dishes. Dough is made; bread is baked – in the same manner, as it was once in merchants’ houses.
A combination of good and natural products and modern technologies of cooking enabled to create a collection of dishes which made a conquest of its admirers very quickly. Using the merchants’ recipes as a basis, cooks of “Tenet” Restaurant added modern accents to them – and the result is the menu which will be to liking of those people who prefer modern cuisine and of those people who revere the culinary traditions of the past.
